The land

Take care of the land and it will pay you back a hundredfold! From a thriving diversity of abundant natural riches, the land nourishes us and quenches our thirst. Every plot of land holds its own secret treasures and particular flavours. The unique plot of land at Saint-Blaise-sur-Richelieu is fertile ground, giving free rein to the boldness and creativity of the farmer, the brewmaster and the distiller. It is recognized for the distinctive features of its sandy loam soil and its humid continental climate, ideal for cereal crops.

Our land generates a variety of raw materials that we transform and enrich through the creation of distinct beers and spirits with local flavours.

The fields

Without a farm, there is no grain, and without grain, there is no beer. That’s why we believe in the necessity of responsible agriculture, organic and local, so as to preserve our precious resources and pass on healthy and viable ecosystems to future generations. As the native chief Seattle said: “The Earth doesn’t belong to us, we belong to the Earth.”

 

Our 103 hectares of fertile, organic land offer us all the grain necessary for the creation of our beers and spirits. From these fields are harvested corn, barley, wheat, oats, soy, buckwheat and rye, as well as aromatic plants.

The fruit

Directly from our land and our windbreak hedges, an abundance of wild berries such as chokeberry, elderberry, cherry (black cherry), Saskatoon berry, slate, haskap, juniper and highbush cranberry constitutes a veritable playground of aromatic resources, for us and for our pollinator friends, the bees.

The hop yard

The hop yard is still in its infancy, but we have lofty goals for it. It’s developing and expanding, bit by bit every year, along with our expertise in cultivating this marvelous rhizomatous plant. On its 1,200 square meters the hop yard has 140 plants flourishing right now, across 10 different varieties of hops, from the most earthy to the most aromatic and fruity, including many tropical-flavoured varieties.

The forest

At the edge of our fields is the verdant cusp of the 15-hectare woodland preserve. Its flora offers us some absolute jewels of unique flavours: those of roasted butternuts, of hazelnuts, of various wild mushrooms, of pine needles, of wild herbs, without even mentioning the precious and abundant sap of our sugar maples. A boreal panoply spanning a surprising gustatory spectrum that we are working to translate into our beers and spirits.

From ground to glass

(towards self-suffiency and agricultural autonomy)

Have you ever asked yourself how many kilometres your beer or gin had to travel and what its components were before it ended up in your glass? Or about the true environmental footprint of this guilty pleasure? We did! And that’s the reason we aim to make this pleasure a little less guilty. In addition to supporting organic and sustainable farming, we do everything in our power to make the journey from the ground to your glass as short as possible.

The business is still young, and certain steps have been taken, but our approach doesn’t stop there: our objective is to become self-sufficient for our entire supply of raw materials and to offer you a 100 percent organic product. Currently self-sufficient in everything regarding grain and berries, we intend to expand this self-sufficiency to all of the raw materials involved in the production of our beers and spirits, including the different varieties of hops.
