This 2025 harvest beer is a unique brew in which we use the vast majority of
hops grown right here on the farm. The use of freshly picked cones gives it an
unrepeatable character. The lager-style yeast results in a light and refreshing
beer, with aromas of citrus and freshly cut grass, a silky texture, and a crisp,
dry finish.

SESSION IPA

Session IPA brewed with a wide range of our cereals (barley, wheat, oat and rye), it becomes our interpretation of this style influenced by our love for farm beers. The yeast used, very expressive, develops peppery and lemony notes that blend pleasantly with the aromas of grapefruit and tropical fruits of Simcoe and Ariana hops. Dry and refreshing finish, slightly mineral.

A table beer is a low-alcohol, refreshing farmhouse beer. Our Petite Gisèle is our interpretation of the style, enhanced by the influence of our collaborator Normand Cyr, where we added Brettanomyces yeasts and aged it for 11 months in white wine barrels to multiply the flavors.

ARONIA SAUVAGE

Coming from a mixed fermentation, Aronia Sauvage is now presented to you in a relatively young iteration, having only spent a short 4-month stint in neutral oak
barrels followed by a 2-month maceration on aronia berries. Fermented until all
residual sugar is gone through a mix of wild yeasts and acidifying bacteria, Aronia Sauvage is a drier, funkier version of our Aronia Sour, still showing off that unique aronia berry vibe – sour, tannic, and bursting with fruitiness.

Inspired by Belgian tradition, this saison is the result of fermentation in a square, flat-bottomed tank. It was followed by a brief maceration of sumac harvested right here on the farm, along with plum pomace. Slightly funky and decidedly rustic, Velours II reveals a surprising complexity on the nose for a “young” saison. On the palate, notes of hay, leather, and stone fruit give way to a finish that’s both dry and thirst-quenching
