HELLES – MUNICH LAGER

The Munich Helles Lager, inspired by German brewing traditions, translates
to “pale.” Exclusively hopped with German cultivars, the Munich Helles
strikes a clever balance between assertive bitterness, a dry and herbaceous
finish, and a surprisingly rich malt character achieved through a brewing
process called decoction.

Our version of Irish stout develops subtle aromas of sweet chocolate, toast, and coffee. Its creamy texture and moderate alcohol content make it exceptionally drinkable.

ARONIA SAUVAGE

Coming from a mixed fermentation, Aronia Sauvage is now presented to you in a relatively young iteration, having only spent a short 4-month stint in neutral oak
barrels followed by a 2-month maceration on aronia berries. Fermented until all
residual sugar is gone through a mix of wild yeasts and acidifying bacteria, Aronia
Sauvage is a drier, funkier version of our Aronia Sour, still showing off that unique
aronia berry vibe – sour, tannic, and bursting with fruitiness.

TERRE NOIRE – DARK LAGER

This dark lager emanates aromas of toasted bread and dried fruits. On the palate, one finds hints of caramel and
a subtle roastiness, blending seemlessly with a moderate bitterness and spicy notes of noble hops in the finish.

Inspired by Belgian tradition, this saison is the result of fermentation in a square, flat-bottomed tank. It was followed by a brief maceration of sumac harvested right here on the farm, along with plum pomace. Slightly funky and decidedly rustic, Velours II reveals a surprising complexity on the nose for a “young” saison. On the palate, notes of hay, leather, and stone fruit give way to a finish that’s both dry and thirst-quenching.

LAGER DE RÉCOLTE

This 2025 harvest beer is a unique brew in which we use the vast majority of
hops grown right here on the farm. The use of freshly picked cones gives it an
unrepeatable character. The lager-style yeast results in a light and refreshing
beer, with aromas of citrus and freshly cut grass, a silky texture, and a crisp,
dry finish.

KENTUCKY UN-COMMON

FINISHED IN BOURBON AND RYE BARRELS

The latest version of our Kentucky Uncommon has benefited from a long
rest in oak barrels that previously contained bourbon whisky and rye, renowned for imparting a dry and spicy finish, adding an additional dimension to the roasted rye bread notes of the original beer. The result is a surprising balance where the richness of roasted malts and the roundness/warmth of the alcohol harmonize with the oak tannins in an elegant finish.

VIN D’ORGE

Each year, we strive to perfect our execution of the bold and commanding Barleywine style. This year, we’ve refined our approach by using only Bourbon barrels—each of a different age. We are proud to present this new iteration of our Imperial Stout. This year’s blend features two Rye barrels and one Bourbon barrel. PETITE GISÈLE

A table beer is a low-alcohol, refreshing farmhouse beer. Our Petite Gisèle is our interpretation of the style, enhanced by the influence of our collaborator Normand Cyr, where we added Brettanomyces yeasts and aged it for 11 months in white wine barrels to multiply the flavors.

VENDANGE PIMBINA

This blend consists of three distinct beer recipes aged, as well as a small percentage of fresh IPA. It was then macerated on the lees of Frontenac Gris from Domaine Amalgame and on highbush cranberry from our land. The result is a complex beer with a citrusy and lactic nose, with notes of hay and grape. The contact with the Frontenac skins gives rise to splendid peach flavors. The short maceration of the highbush cranberry, in turn, imparts cranberry and grapefruit notes.

CONDITIONED WITH MAPLE SYRUP

A blend of Imperial Stout and Barley Wine aged in oak barrels, then conditioned with maple syrup from our lands. At the crossroads of these two styles, this hearty mix develops rich aromas reminiscent of maple leaf cookies, heralding a well-bodied beer. On the palate, the flavors of bourbon and milk chocolate are quickly dominated by waves of toffee and maple syrup tart. Just sweet enough to let a hint of alcohol warmth shine through in the finish.
